INGREDIENTS

  • 1 kg whole chicken bones (about 4-5 whole pieces)
  • 500 grams chicken drumsticks (about 4) skin removed
  • 2 stalks celery (leaves included) sliced thinly
  • 1 carrot peeled and diced
  • 3 garlic cloves bruised
  • 1 bay leaf optional
  • 2.5 litres water
  • 4 servings macaroni
  • 2-4 stalks cai xin or xiao bai cai (baby bok choy) blanched in boiling water for about 30 seconds

DIRECTIONS

  1. Blanch chicken bone and drumsticks in a pot of boiling water. Rinse and drain; set aside.
  2. In a soup pot, add blanched chicken, celery, carrot, garlic, bay leaf and water. Bring to a boil, reduce heat and simmer for 2 hours, season to taste with salt. For best results, keep warm in thermal pot for a few hours.
  3. Sieve the chicken stock to get particle-free soup. You may want to reserve the carrots and celery. Shred chicken from chicken drumsticks. Set aside.
  4. Cook macaroni in salted, boiling water. Drain. Divide cooked macaroni, shredded chicken and blanched vegetables into 4 serving bowls. Ladle hot chicken stock over and serve immediately.

Egg Drop Soup

Ingredients:

2 tablespoons corn starch

3 tablespoons water

1 ¾ cups (425 ml) homemade chicken broth or 1 can (14-oz/400-g ) store-bought chicken broth

1 cup (250 ml) water

½ tomato, diced 3 dashes

white pepper

½ teaspoon salt or to taste

2 large eggs, lightly beaten

Method:

1. In a small bowl, mix the corn starch with the water. Stir to blend well. Set aside.

2. Bring to boil the chicken broth and water in a pot. Add the tomato, white pepper, salt, and thicken the soup with the corn starch mixture. Stir the soup with a ladle and turn off the heat.

3. Swirl the beaten eggs into the soup and immediately stir around for three times with a pair of chopsticks. Cover the pot with its lid for 2 minutes. The eggs should be cooked and form into silken threads.

4. Dish out into individual serving bowls and serve immediately.

Carrot & sweet potato mash

Ingredients

  • 500g carrots, chopped
  • 500g sweet potatoes, chopped
  • 3 garlic cloves, bashed
  • 1 tsp cumin seeds, toasted
  • 25g butter

Method

1) Put the carrots, sweet potatoes and garlic in a large pan of salted water, bring to the boil, then cook for 12 mins.
2) Add cumin seeds, butter and seasoning, roughly mash, then serve immediately.

Skinny carrot fries

Ingredients

  • 500g carrots
  • 1 tbsp cornflour
  • 1 tbsp vegetable oil
  • 1 tsp finely chopped tarragon
  • a little black pepper

Method

1) Heat oven to 200C/180C fan/gas 6.
2) Cut carrots into ‘fries’, about 1cm thick, and mix with cornflour and a little black pepper.
3) Toss with vegetable oil, spread in a single layer on a baking tray lined with parchment, and bake for 40-45 mins, turning halfway.
4) Mix a little salt with tarragon and toss through the cooked fries

Mock Chicken Recipe

Ingredients

  • 1 (12 ounce) package firm tofu

Directions

  1. Leave tofu in original package and place in freezer for 72 hours.
  2. Bring a pot of water to a simmer. Place package of tofu in water and allow to thaw, approximately 10 minutes. When thawed, remove from package, place in a piece of cheesecloth, and squeeze out liquid. Shred, dice, or slice tofu and include in your favorite recipe.
